Every time I look at a recipe, I see measurements. I get it—some dishes (especially baking) require precision. But for everyday cooking? Constantly checking a recipe, making sure every measurement is exact, can honestly take the joy out of the process. Instead of focusing on creating a delicious meal, you're stressing over tablespoons and grams.
That’s why in most of my recipes (unless they’re super complex), you won’t find strict measurements. I want our cooking community to break free from the idea that following a recipe to the letter guarantees great food—because let’s be real, nothing is worse than doing everything exactly right and still ending up with a bland dish.
When it comes to cooking, I have one rule: trust your taste buds!
While baking is a science that needs precise measurements, cooking is all about creativity, balance, and personal preference. I rarely measure ingredients because flavors should be adjusted to what you enjoy. Want more spice? Add another spoonful of gochujang. Prefer a tangier kick? Up the BBQ sauce. Cooking should feel natural, not like a math test!
That said, some ingredients do need a little restraint. A drizzle of honey can enhance a dish, but too much can overpower it. Salt? Start small—you can always add more, but you can’t take it out!
So next time you cook, experiment! Taste as you go, trust your instincts, and make the dish your own. After all, the best meals are the ones made with intuition (and a little bit of love).
